Inspired by Trinidadian-style green seasoning, this blend layers cilantro, thyme, scallion, garlic, parsley, scotch bonnet pepper, and warm island spices into a savory, herb-forward seasoning designed for marinades, rice dishes, grilled proteins, and vegetables. Traditionally, many Trinidadian green seasonings use culantro (also known as chadon beni), but because dried culantro can be difficult to source consistently, we use cilantro to preserve the bright herbal character of the blend.Our version layers parsley, thyme, scallion, garlic, and warm island spices into a shelf-stable blend full of bright, savory flavor. Use it as a marinade base, stir it into rice, season grilled vegetables and proteins, or rub it into chicken before cooking.
